Its been a while since I have taken my V8 one out but i'm assuming its similar to a TT one & they seal by the rubber ring around the outside of the thermostat & no gasket is used, does the new thermostat housing look exactly the same as the old one ? & if so just fit it without the gasket supplied, ( not a bad idea to replace the rubber seal on the thermostat though )
Personally I reckon its best for a lot of these things to go genuine Toyota, not some Chinese copies
