I am trying to match up a Bridgestone potenza rear tyre 275-35-19.

A supplier has only got 285-35-19 in a Pirelli.

Is it possible/legal to run one of each on the rear?

(I am in this position as NO ONE has any 275-35-19)

Adam, not sure of the legality of doing this, but I think you would be most unwise to do so. In not knowing the exact performance differences in the tyres, you could quickly find yourself in difficulty and/or in the scrub.

apart from the legalities (aka NOT legal), you will also have a different rolling diameter from the other tyre.

This, after a while will cause damage to your diff.
