Finally!! Big thanx to Alberts Cannington, who installed the monitor (needed custom brackets). After spending months stuffing around with Extreme Machines, I finally got some professionals to take a look at my computer/car. Here she is.
Pics aren't great, but she looks, sounds sweet. Now my wife wants one in her car :P

It's a full 1.3Ghz Comp with 80GB HDD and Duel layer DVD burner. M/B is 17cm square (VIA). All custom built by me :D That also includes $300 install on the monitor.

Hey guys got a question about a car PC, I'm planning my system at the moment, I have a Laptop that I want to mount in my boot, with a touch screen upfront. Now connection wise I have everything sussed but what I can't figure out is how can I setup a remote power switch of some sort so that I don't need to open the boot everytime to boot up the laptop?

Luke, I am doing something similar but will be using a desktop type arrangement, controlled with wireless mouse and maybe a keyboard. Probably get a wireless cable so I can update without having to worry about removal of the unit from the car.
Trying to figure out the remote standby mode at the moment.

A USB remote control to replace the keyboard and mouse. Hmmm, that actually sounds a lot better than having a wireless keyboard and mouse in the car.

Will if it is a car PC I don't think you will need an inverter.
Alfred, depending on the power supply I use I would need to have something to convert 12V to 80W+ to run the PC. I'm building my own PC, not buying a CarPC specifically.

Will, if you haven't got the bits already, see my post above. I have for sale an Opus 150W DC-DC convertor, which will plug straight into any ATX style mainboard, as well as power hard drives, floppy drives etc... I also have a mainboard...

I got the Microsoft MCE Remote, but I'm not bothering with it. The k/b works fine(windows media player was crap, using winamp instead). I never shut the PC down, just put it in stand by, and when I'm driving I have my playlist already in, and the cursor over the skip track button. I usually even close the monitor.
