Can I replace the stereo head unit without replacing the EMV?

No you can't.

You can fit an after market head unit BUT you MUST retain the original tape player as it does all the switching and volume control - digitally via serial bus. Unless you want to frig around with trying to emulate those functions you have to keep the tape player.

The ONLY way you can feed ANY external input into the EMV system is through the TV input (or an FM modulator but you'll lose sound quality).
The factory system DOES NOT have tone controls on the TV input. Vlads' radio mod will give you tone controls on the TV input.

The stacker can be removed without problem. The CD button on the tape player will no longer do anything. You can't plug anything else in in place of the stacker (proprietry serial bus communication; the input won't work unless the EMV computewr can 'see' the stacker). There is no aftermarket alternative to the CD stacker.

Placing boxed subs in the boot WILL result in low frequencies being time-delayed unless you have a head unit capable of time delay compensation.
(if a 500Watt 10" sub in the parcel shelf is not enough then you're bloody-well deaf!! you should be able to squeeze a 12" in if you must.)

The EMV, tape player & radio tuner are an integrated system that will NOT work if you replace any part of it.

The radio tuner connects directly (and separately) to the sub amp and 4 chan main amp. These amps can be upgraded but beware of the balanced sub amp input. After 1994 the sub amp was integrated into the main amp so replacing the sub amp became more difficult.
