I'm wanting to replace the original wheels off my '91 V8 Limited, what is best as a 'sensible' suggestions to put on? I'll be considering cost and I don't want any ongoing problems once fitted due to size, if legal etc etc

I would go 18's, good range of tyres available at a reasonable price and make sure they will be suitable for brake upgrades, (if that may be your intention down the track).
19's fill the arch nicely, but that would be the absolute maximum I would go.

Legality is a matter of tyre size, as long as you keep the overall size of the wheel tyre combination about the same its legal, this isnt very hard to do. It will keep the speedo in check too.
I recently switched from 16s to 18s. The ride is ok but on sharp bumps like potholes it is definitely noticeable how much more it crashes. On things like tempe wheels the will put the offset a little out closer to 40, with the ideal being 50. Again, its a definitely noticeable how much more tramlining you can get but mostly its isolated to braking like when there is a rut in the road, otherwise its ok.
So numbers wise, front 18x8, +50 ideal but anywhere up to +40 is fine. 235/40/18
Rear, same again, or 18x9 265/35/18 is fine too. Same offsets.
Also make sure they put hub rings on the wheels, soarer hub size is 60.1 mm. It matches the wheel to the soarer hubs as aftermarket wheels are designed to fit many different cars/hub sizes.

There is no legal restriction on the diameter increase of wheels in NSW, as long as the overall rolling diameter stays within a specific percentage of stock. So in theory you could legally run 20" wheels if you wanted to, as long as the profile of the tyre was small enough so that the overall diameter of the wheel/tyre combination was within limits.
Note there are restrictions on increases to width and track though.

I'm now favouring 18" x 8" wide all round with a 50 offset(?). But James 17" look great on the car.......I'm not after greatest performance possible, I just want it to handle and look OK for the $$ spent.
