I was wondering if it's possible to change the display on the bottom of the dash to show what gear the car is actually in, rather than where the selector is.

Actually easier on a manual as there is no slip in the torque converter. Use the output the speed sensor and compare (a series of voltage comparators would do it) it to revs to generate one of six outputs to go to the dash. How you would display it on the digital dash is another question. 1 and 2 are already there. I'm not sure what type of display it is, if it is 7-segment then easy. The Yank analogue dash would be easy, you'd have to make new lenses with the figures 1 to 5 (or 6) with neutral indicated for a 5 speed as well (lenses are easy, they are just plastic film. Use PCB negative making procedure)
You could do the same with the auto but slip in the converter would make it difficult to differentiate between gears while the converter is under load. The solenoid idea would be better for autos, just use a matrix circuit to give the right outputs depending on which solenoids are activated.
