Ok so it's almost time for wheels and tires, I'm going with 17's based on price and the fact that I drive a lot and our roads here are garbage! I've done a little searching and I see that a few guys running 245's in the front and 275's in the rear. My plan(or hope) is running a 8.5-9 wide rim in the front and 9.5-10.5 in the rear and 245/45/17 front and 275/40/17 rear, will they fit and what offset wheels would be recommended?

like +40 on front +38 rear if you want them sitting nice. Get 18s in those sizes and put some bigger rubber on to fill the guards. When Celsior guards aren't filled properly they look funny. Big car + big guards = big wheels
