Is it worth installing a catch can in a v8? if so where and what brand? what hose size? anyone?

Nope... Catch cans are generally used in High rpm or high boost applications. If your car requires a catch can cause its spitting oil through the breathers, then its generally got deeper issues which need to be resolved , in my opinion.
