I had my first track day in the 31 yesterday and the car performed faultlessly, the 6 speed and lsd are just made to be on the track, I did however notice that the power steering fluid overflowed a little so obviously getting a bit hot, what I want to know is has anyone made up or know where to get a combination power steering and engine oil cooler that I could mount up like a front mount intercooler

Nik,
I fitted separate cooler cores in the front guards, one for power steering and one for engine oil. The power steering one is dead easy if you fit it on the drivers side where the TT SMIC used to be. Any core will do. I used a Mitsubishi Magna Auto Trans cooler and some hydraulic oil hose to plumb it in from the steering box. The stock cooler is so poor (for track work) that anything you add/replace will be better. No more boiling power steering fluid.
The oil cooler for the engine is a little more fiddly, but easy if you use a simple sandwich plate under the oil filter. I mounted it in the passenger side as that is where the filter is on the JZ.
I think Andrew's custom job has power steering and oil coolers in the same core. It mounted in front of the radiator.
I reckon you could get something custom made at any decent radiator place using some off the shelf cores if you wanted to.
