I'm doing the Duh because I'm about to display ignorance. I have two CATS in my car, I know they're a fine mesh section in the exhaust, what do they do? What is a "Cat Back" system and why is it good?

CAT or catalytic converter is on the car purely for emissions control. A cat back system is an exhaust system built from the catalytic converters back to the exhaust tip. Although having stock headers is restrictive of airflow, having a decent cat back system will help the exhaust flow and potentially give you a few extra HP while giving your car a nice exhaust note.
