If I remove the top end of things, throttle body, plenum and inlet manifold, how critical is it to replace the gaskets? Are some more crucial than others? Has anyone used stag or something like that instead of replacing them? What to use, or do I have to order new ones and replace them?
If you are doing the starter motor all of these things and more have to come off. People who have done that should be able to comment.

Oh, that was a mistake. When I got it all back together it would not idle properly.
I hoped that it was the seals on the injectors so pulled them off and fitted new ones but although it did improve, they were leaking a bit, there was still a whistling sound coming from underneath there somewhere. I pulled everything off again thinking I may have put one of the lower manifold gaskets on upside down but, NO, I had to order new ones.
Best deal seemed to be Rock Auto for about $20 for a complete set including Plenum gaskets, so I got 2 sets (I have to pull everything off my 31 as well to do the knock sensors). Had to pay a ridiculous $70 freight (same for 2 as for 1 and anything else I might need was in a different warehouse so would have had to pay freight for whatever else I might buy so didn't worry about anything else), but the whole deal was still way cheaper than I could buy in Australia, so no worries.
I made my own throttle body gaskets with some super cheap gasket paper for $10 for 0.8 ml thickness sheet.

Hi Tom, I have used shipito once and found that it was only a little cheaper and took ages to come to me. The reasons were: I had to pay the local postage which took over a week to get to shipito warehouse on both packages and then I had to pay a monthly fee to shipito and then the postage, which was cheaper but not that much different at the end of the day.
This would not have been the case if my items were more expensive and weighty. But with something the size of the gaskets it would have been ages before I get it and maybe $15 cheaper.
I will compare when doing something like a suspension system with components from different places.
