Unplugged is not a fair test. As it runs the engine in a base map fuel/air/timing setting, so can also override other sensors that might be the actual issue.
On cold starts with no AFM it will likely splutter for a bit or stall.
Best to replace it with a new one (used ones are hit and miss) or save some money and install a MAP sensor setup so you can delete the AFM.

Hi Diane, I had a similar problem i think, turned out to be passenger coil on its way out. Coil died weeks later over a speedbump at the shops, car ran on 4 cylinders, was noisy, smokey, and had no real power to accelerate. Dashboard rev counter disappears over 1000rpm too.
Buy new coils now from repco or supercheap for $50. Very easy to install. Can't hurt either way even if it's not the coils. Otherwise I think your problem could be spark plug wires. A bad wire can do what you said also, as well as a bad plug.
Lastly, I read the coolant ECU temp sensor will cause the car to be slow and sometimes misbehave under 3000rpm, then be fine again after 3000rpm. This is a $40 part from Repco or Supercheap.
Topping it off, if your car has not had the ECU bits replaced, it's time to do that now. Every soarer in the world must have this done. All ECU's are failing I've read. There are no exceptions. You can tell if it is the AFM by unplugging the AFM. If the car runs good under 3000rpm, it might be the AFM. If nothing changes, it is not the AFM. With the AFM unplugged on a 'good' Soarer, the car uses lots more fuel and gets a happy amount of more power.
