Did you back off the tension on your hand brake shoes? One of the 5 holes gives you access to a 'turnbuckle' which adjusts the shoes in and out. Yours could have enough tension that the shoes are biting against the drum. It is also possible that the shoe has rusted/seized against the drum. which is why you may need a (rubber) hammer to lightly tap the rotor off.
Don't worry about the spring falling out- you need to remove that if you change the brake shoes anyhow. You can put it back in once the drum/disc is off.

You use a screw driver to turn it and yes it will make a, um, spring under tension sound. Kinda like a twang. I don't remember off the top of my head which way is which, but you'll know you are going the wrong way if the disc/drum tightens up and you can no longer rotate it.
Don Bagnall or one of the guys might have an exploded picture for you so you can see how it all goes together.
I can highly reccommend you contact Jeff Harper and get hold of one of his 'Soarer Bibles'- a combination of the translated japanese and american workshop manuals. Very informative.

I haven't installed new brake shoes, but I have removed and refitted mine to do the wheel bearing. I can't think of any part of the job that was hard at all. I just laid it out in the order it came off and replaced it all in the opposite direction.
Tell your mechanic to grow a set, LOL.

Seriously mate, you seem the type to have a crack yourself. I reckon you need to get a copy of the Soarer bible and you'll never look back. Step by ste for a lot of minor and major repairs. p
