The Nimitz-class carriers are 333m long (http://en.wikipedia.org/wiki/Nimitz_class_aircraft_carrier), and the take-off distance from a cat-shot is probably less than half that, judging from photos. So 0-100 (-ish) knots (0-185km/h) in about 100m. Although the aircraft in the clip looks like a Tornado to me, and AFAIK they don't have a naval carrier variant.

Most modern carrier borne jet fighters would be closer to 150 - 170 knots take off speed, especially when heavily loaded. Thats about 270 - 300 km/h, kids.
Landing speed is about the same, and they stop in half that distance.
FYI, they also hit full power as they land, in case they miss the cables, so they don't run off the end of the ship.
